Spaghetti Aglio e Olio is spaghetti with garlic and oil a speciality from Naples, Italy.

Spaghetti Aglio e Olio
Aglio e Olio is popular name and is made by lightly sautéing garlic that is sliced/ minced/ pressed garlic in olive oil. Alio e olio is garnished with dried red chilli flakes and finely chopped parsley. You can also garnish the spaghetti with grated parmesan or pecorino cheese, which again according to some traditional recipes, cheese should not be added. I have not added cheese.
You will also like to add Fresh Pistou, a Pesto with a Difference to spaghetti. Try it.
I started out making Spaghetti Aglio e Olio as it is much enjoyed in Isreal. Then I realised that Itlay also begins with I. This is my share for #BM 93 as 1 Alphabet 3 Countries!

Spaghetti Aglio e Olio
- Serves: 5 people
- Preparation time:10 minutes
- Cooking time: 25 minutes
Ingredients:
- 1 packet spaghetti
- 6 cloves garlic, thinly sliced
- ½ cup olive oil
- ¼ teaspoon red chilli flakes, or to taste
- salt and freshly ground black pepper to taste
- 2 tablespoon parsley, dried
- 1 cup Parmesan cheese( I did not use)
Method:
- In a large pot cook the spaghetti in salted water as per instruction on the packet. The pasta should be cooked but firm to the bite.
- Drain and run cold water over the spaghetti apply oil and set aside.
- In a frying pan add the

- Over medium heat cook and toast the garlic till golden brown. Remove from heat.
- In the pasta add and stir red chilli flakes, black pepper, and salt.
- Pour in olive oil and garlic, and sprinkle parsley and half of the Parmesan cheese (if using) and stir until well mixed.
- Serve pasta topped with the remaining cheese.

though they might love it in Israel, it is definitely a very traditional Italian recipe and is served as the pasta course that comes between antipasta and segundo . I would love this simple spaghetti dish whether served traditionally or for any time!
