Instant Ragi Idli| Ragi Recipes| Breakfast Recipes
- Serves: 12-14 Idlis
- Preparation time: 5 minutes
- Cook time: 12 minutes
Ingredients:
- 1 cup ragi flour
- 1 cup rava
- 1 cup dahi
- 5 tablespoon oil
- ½ teaspoon mustard seeds
- 1 spring curry leaves
- 1-inch ginger
- 1 teaspoon Eno
- Salt to taste
- Water
Method:
- In a bowl, add the ragi and rava mix well.
- Add the curd and mix well. Set aside to rest for 10-12 minutes.
- Heat 2 teaspoon oil in a small pan splutter mustard seeds add curry leaves.
- Transfer to the ragi, rava and curd mixture and mix well.
- Adjust the consistency of the batter to make a smooth batter that does not fall and without lumps.
- Add the Eno fruit salt and ginger mix well.
- Pour the batter into prepared idli moulds and steam for about 12 minutes.
- Let the idlis rest in the mould for about 5 minutes then open the mould.
- De-mould the idli and serve with chutney immediately.

Sounds awesome and easy to do! The only thing stopping me from making idli was the unavailability of the special mould. Recently a friend told me I could make idlis in cake pan in ordinary steamer and then cut in squares. I'll try making your healthy version the same way too. ????

She is right Maria you can make it in regular cooker vessels too in the cooker without the whistle. Steam for the recommended time. Cool and then cut your idli is ready.

Archana I love ragi idli so much. I make it often for lunch as we get ragi flour readily in Kenya. It is called wimbi there. Sometimes I love to have it just with podi powder and ghee. Your instant ragi idli are so fluffy and tempting.
