Fresh Methi Crackers Baked ( Baked Methi Mathri) is a healthier baked version of the Indian savoury cracker Methi Mathri.
A Mathri is a deep-fried snack that is made from refined flour.
However, here I have used whole wheat flour and chickpea flour and baked the mathri.
The addition of fenugreek or methi leaves increases the dietary fibre and flavour of the mathri. But then consuming methi has its own benefits like it lowers cholesterol, and controls diabetics to name two.

Freshly Baked Methi Crackers
This month for BreadBakers we are making Crackers that our host for the month, Sue who blogs at Palatable Pastime asked us to bake crackers or crisp lavash of any flavour and with any flour. As a snack, we like this Baked Khaman Dhokla with our Tea and Coffee.

Baked Methi Mathri
The main ingredients are whole wheat flour, chickpea flour, fresh methi leaves, green chillies, ginger, cumin, red chilli powder, turmeric, sugar and oil.
I have adapted the recipe to suit our tastes from here.

Freshly Baked Methi Crackers| Baked Methi Mathri #Bread Bakers
- Serves: 40 pieces
- Preparation time: 10 minutes
- Cook time: 20 minutes each tray
Ingredients:
- 1 cup atta/whole wheat flour
- ½ cup besan/ chickpea flour
- 1 green chilli chopped
- 1 teaspoon ginger chopped
- 1 teaspoon jeera/cumin seeds
- 1 teaspoon red chilli powder
- ½ teaspoon haldi/turmeric powder
- ½ teaspoon hing/asafoetida
- 1 tablespoon sugar
- A pinch of cooking soda
- 2 tablespoon oil
- ½ cup methi/ fenugreek leaves
- ½ cup water
Method:
- Preheat oven (OTG) at 150° C.
- Crush the green chillies and ginger to a fine paste. I started out with this chillies but then I reduced the chillies and ginger by half.

- Chop the methi and add to a bowl. I used what we call in India a “Parat”

- In the parat, add the green chillies, ginger paste, methi leaves.
- Add the whole wheat flour, besan, salt, sugar, cumin seeds, red chilli powder, haldi, soda.

Cooking Soda
- Add the 2 teaspoon oil and rub the flour until the flour resembles crumbs.

- Add a little water and knead to a stiff but pliable dough.
- Apply the rest of the oil to the dough and keep it covered for 30 minutes.
- Make 4 equal balls with the dough.
- Roll the dough into a thin circular disc and then cut into desired shapes.

- Place the strips on a greased baking tray and bake for 20 minutes until crisp and golden.

- Cool and store in an airtight container.
