Oven Roasted Honey Chilli Almonds is a quick-fix healthy and delicious snack recipe. Perfect as my trail mix for a trek this weekend.
They taste good with drinks too. Yes, the perfect “chakana” in the local parlance is something you nibble on with an alcoholic drink. Remember however to eat them in moderation they are high-calorie snacks.
I have baked these nuts but I will share steps to them in a pan on the stovetop.
These nuts are addictive and can be varied to suit your tastes. How about just honey, with salt or peri-peri masala?
The nuts too can be varied you can use almonds, cashew nuts, pecans, peanuts, or walnuts why not fox nuts??
In Goa, we get an array of flavoured cashew nuts from peppered to red chilli. Some are sugar-coated too.

This recipe is my old postdated 19-Dec-2018 I am updating with an SEO-friendly write-up and pictures.

My entry to this event was last moment and hence my post was random and I baked and posted on the same day.

How to make Honey Chilli Nuts
These are the ingredients you will need. For quantities please check the recipe card.
Ingredients:
- Raw almonds
- Honey
- Chilli powder
- Oil
- Salt
- Makhana or Fox nuts
Method:
The Oven Method:
- In a bowl mix the oil, honey, chilli powder, salt and almonds.
- Meanwhile, preheat the oven to 180°C/350F. Line a baking tray with parchment paper or foil.
- Transfer the almonds and set them in a single layer.
- Bake for 10 stir the almonds and return to the oven for 10 more minutes. This is something that works in my oven it will be different for yours. Keep an eye.
- The almonds will become crisp as they cool.
- Cool and store.
The Stovetop Method:
- In a non-stick pan, on low flame heat oil.
- Add the nuts and toss them until they become crisp.
- Add the honey and salt.
- Switch off the flame and add chilli powder. This will prevent the chilli powder from burning.
- Mix well. Cool and serve.
For Fox Nuts Or Makhana:
- Roast the on a low flame the makhana in a thick wok till crisp. Keep stirring so that the makhana or fox nuts are evenly done.
- Once crisp, switch off the flame and add the salt, honey and chilli powder.
- Mix well. Cool and serve.
Substitutes:
- In place of almonds here use cashew nuts, pecans, walnuts, raisins, seeds or a mixture of all these.
- Then there are chana and peanuts.
- If you plan to use fox nuts or makhana then make this on the stovetop.
- Use red chill flakes in place of chilli powder.
- In place of oil, I will prefer to use clarified butter, especially for the foxnuts.
Variations:
- Use flavours like chaat masala and amchur powder for an Indian flavour.
- Use peri-peri, chipotle, cheese tomato, cream and onion flavours and BBQ flavours.
- Use chilli flakes or pepper too as your flavouring agents.
- In place of almonds here use cashew nuts, pecans, walnuts, raisins, seeds or a mixture of all these. peanuts, and roasted chana too will make an excellent base.

How to serve:
- Serve these delicious almonds with mocktails, cocktails
- As a snack.
How to store:
- These nuts can last a month long in an air-tight container. (if can leave the container alone). Seriously they are addictive that you finish them in no time.
- I prefer to make a small quantity so never tried freezing them. If you try please let me know how you stored them. I can update it here.

Honey Roasted Almonds
Equipment
- 1 Bowl for mixing
- 1 Spatula
- 1 Baking tray
- 1 Kadhai/wok
Ingredients
- 1 cup raw almonds
- 3 tablespoon Honey
- 1- ½ tablespoon red chilli powder + ½ tablespoon more (optional)
- 1 tablespoon Oil
- ¼ teaspoon Salt
- 1 cup Makhana
- 3 tablespoon Honey
- 1-½ tablespoon red chilli powder
- ¼ tablespoon Salt
Instructions
For The Oven Method:
- Take oil, honey, chilli powder, salt in a bowl and mix well.
