A tantalising aroma fills the house as this moist and filling Fresh Apple Cake bakes. It is the perfect cake to carry as a gift for friends or to enjoy with coffee or ice cream.
Apple cakes are a popular dessert. In this cake, apples and walnuts are a must. The cake batter is traditionally spiced with nutmeg and cinnamon. Add nuts like almonds or walnuts, and you have a yummy cake that is simple to make yet satisfying.
Apples and applesauce used in baking cakes make them moist.
The other cakes I have made are Apple Upside-down Cake and Eggless Applesauce Chocolate Cake. But apples can also be used to make Carrot, Apple and Orange Smoothie, Easy-Baked Apples, Plum and Apple Cobbler, and Apple Pie.
Ingredients for making Apple Walnut Cake
These are the ingredients I have used. For the exact measures, please refer to the recipe card.
- Apples: You can use any fresh apple, but I generally use the Gala or Delicious variety for the cake.
- Walnuts: These are good-quality nuts. You can chop them into pieces, but I like to use the halves. I love the bite and crunch they give the cake.
- Maida: Or All-purpose flour (APF), is the base for this cake.
- Baking Powder: The leavening agent helps the cake to rise.
- Sugar: The sweetener here is sugar. I have used granulated sugar, but you can also use brown sugar or a combination.
- Oil: Vegetable oil that is odourless and tasteless. I am using refined sunflower oil here.
- Eggs: Lightly whip the eggs to aerate them.
- Milk: Use your dairy milk it helps to loosen the batter.
- Vanilla: The aroma the vanilla gives the cake is unbeatable.
- Spices: Use cinnamon and/or nutmeg. I do not use either.
How to make Apple Walnut Cake
- Preheat oven to 180°C/350° F and grease and line a 7*8 inch tin. You can also use an 8-inch round tin.
- Peel and core the apples. Chop them into bite-sized pieces.
- Quickly transfer the chopped apples to the sugar. Mix and set aside.
- Sift together the flour, baking powder, dalchini/cinnamon(if using) and salt.
- Set aside a few nuts to top the cake. Mix the rest in the flour mix.
- In a large mixing bowl, stir the oil, eggs and vanilla.
- Fold in the flour and the apple mixture.
- If the batter seems dry, add the milk and fold.
- Transfer the mixture to the prepared pan and spread evenly.
- Sprinkle the reserved nuts.
- Bake in the oven for 45 minutes or until the toothpick inserted in the centre comes clean.

Apple Walnut Cake Recipe
Equipment
- 1 Oven
- 1 Baking pan
- 1 Parchment paper
- 1 Knife and board
- Bowls
- Sieve
- Spatula
Ingredients
- 4 cups Apples chopped
- 2 cups Sugar
- 2 cups maida/ all-purpose flour
- 2 teaspoon Baking powder
- 2 teaspoon dalchini/cinnamon powder optional
- 1 teaspoon Salt
- ½ cup vegetable oil
- 2 eggs beaten
- 2 teaspoon vanilla extract
- 2 tablespoon milk optional
- 1 cup Walnuts chopped
Instructions
- Preheat oven to 160°C/320° F.
- Grease and flour an 8 inch round pan.
The Apples:
- Peel and core the 4 cups Apples. Chop them into bite-sized pieces. You will need to chop and measure. I needed 4 apples.
- In a bowl, mix the 2 cups Sugar and chopped apples. Set aside.
The Flour:
- Sift together the 2 cups maida/ all-purpose flour, 2 teaspoon Baking powder,1 teaspoon Salt and 2 teaspoon dalchini/cinnamon powder(if using).
- Set aside a few1 cup Walnutswalnuts to top the cake and mix the rest of the 1 cup Walnuts in the flour.
The Wet Ingredients:
- In a large mixing bowl, stir the ½ cup vegetable oil, 2 eggs and 2 teaspoon vanilla extract.
Bring it all together:
- In the wet ingredients mix the apples and sugar well.
- Stir in the flour mixture.
- If the batter is dry, add 2 tablespoon milk and mix well.
To Bake:
- Transfer the mixture to the prepared pan and spread evenly.
- Sprinkle the reserved nuts and bake in the preheated oven for 45 minutes or till the toothpick inserted in the centre comes out clean.

I doubled the recipe as I had 4 large apples to use up. But I had to add 30 minutes to the baking time, made it in a 9x13 baking dish. Moist and perfect. Also I didn’t have walnuts so I used the pecans I had and it was good.

You should peel and core the apples. The peels in your mouth are not a nice thing.
