Why so many ice creams?
Summer is in full swing and we have been craving ice cream every day. Going out often is something we are avoiding so I have been making Summer Coolers and ice creams at home.
I served this tender coconut ice cream made without condensed milk with some strawberry compote on the side. Hubby wanted to know when I brought it? Mission accomplished 2 successful ice creams made!!
Why make this Tender Coconut Icecream copied from Natural’s ice cream?
- It is homemade and has no ice crystals.
- You need not buy an ice cream maker.
- This is a quick recipe that needs hardly 20 minutes to make the base.
- Freezes beautifully and the taste is exactly like the store brought one.
- I rather not step out for my guilty pleasures!

Getting Tender Coconut...
Tender coconut is called Shahala in Marathi, Elaneer in Kannada and Adsar in Konkani languages.
- For me getting tender coconut is very easy. The coconut plucker is happy to oblige us with tender coconut from our tree. Or a phone call to my greengrocer I can get fresh tender coconut. I enjoy making and we love the Tender Coconut Water Jelly with Gelatin, Tender Coconut Falooda Recipe.
- But my Sister-in-law tells me that it is not easy for her. She hopes to get some in the supermarket, Asian stores. Get both the tender coconut meat and water. There is no substitute for these ingredients, the regular coconut will not work for this ice cream.
Ingredients for making Shahala che Ice Cream:
These are the ingredients used for measures please check the recipe card.
- Whipping Cream
- Tender Coconut Water
- Tender Coconut Meat
- Coconut Milk
- Condensed Milk ( I did not use)
- Chopped Tender Coconut
Substitutes and alternatives:
- In place of coconut milk you can use regular milk but just thicken it a little
- Sweeteners use powdered sugar or use condensed milk. Condensed milk will give a lovely texture too.
- The whipping cream you can substitute with fresh cream chilled. Will need you to keep the fresh cream in the fridge for 48 hours then whip it on ice. Too much work but be my guest if that is all you can get. I have tried this just once in the past and not enjoyed the experience.

How to make Tender Coconut Ice Cream?
- Chop the meat of the tender coconut into small pieces and remember to set aside the meat of ½ a tender coconut.
- In a blender blend to a smooth paste the meat of 1 tender coconut and tender coconut water and the coconut milk.
- In a chilled bowl whip the whipping cream to stiff peaks.
- To the whipped cream fold in the blended tender coconut paste gently. We need to keep all the air whipped in trapped inside the ice cream.
- Check if you need the mix to be sweet? For me, this was sweet enough so I left it but you can add condensed milk and fold gently till well mixed.
- Finally, add the chopped coconut meat and mix gently so that the tender coconut pieces are well mixed.
- Transfer to an ice cream box and freeze for 8-10 hours.
- When well-frozen scoop and serve.
Pro-tips to make Adsarache Ice Cream:
- To get an authentic tender coconut flavour and texture use the meat of the coconut bits in the ice cream.
- Please check if there are any hard bits of the coconut in the coconut meat and remove them.

Tender Coconut Ice Cream Recipe
Equipment
- Blender jar
- Handheld whipper
- Bowls
- Ice cream box
Ingredients
- 2 cups chopped tender coconut meat divided
- ½ cup coconut milk
- ¾ cup tender coconut water
- 1 cup whipping cream
- 1 cup condensed milk optional
Instructions
- Chop the tender coconut meat into small pieces.
- In the blender jar add the coconut milk, coconut water and the chopped tender coconut and blend to a paste.
- In a chilled bowl add the whipping cream and beat with the handheld mixer till you get stiff peaks.
- Now gently fold the coconut paste into the whipped cream.
- Check the sweetness of the mixture if you need it to be sweeter add the condensed milk and fold gently. Remember to add a little at a time and fold gently.
- Finally, add the reserved bits of tender coconut and fold gently.
- Pour in the ice cream box, cover and freeze for 8 to 10 hours.
- Once frozen scoop out the ice cream and serve.

Like Goa, Kerala also has a lot of coconut trees and we get a lot of tender coconut when the guys come over to cut the coconuts from the trees in our backyard. Never knew that was a luxury:-)! Love this ice cream so much, completely new for me!

Earlier getting a tender coconut in my area was very difficult, but due to this pandemic now heaps of tender coconut are seen everywhere. I have made this ice cream couple of times and it tastes yum. Yours without condensed milk will surely reduce the calories, thus the guilt associated with consuming high calories. Definitely needs a try.
