Being hot and humid we generally tend to search for new ways to hydrate ourselves. There are times when I just soak cucumber and lemon in water to make infused water you can add salt to it if you like.
But the best is when we can get fresh tender coconut( since it rains getting someone to climb the coconut tree is dangerous). So we get the coconuts and tender coconuts after rains. Around the time of Ganesh Chathurthi, the coconut plucker called “padeli” comes to pluck coconuts.
Anyway, when I got tender coconut this time it was a big bunch of about 10-15 coconuts. Thought you can drink coconut water all day round without side effects, 10-15? becomes difficult! Also, once you become used to fresh sweet tender coconut the next day we do not enjoy it much. So Falooda!
Now that I have called it Falooda you will say where are the basil or sabja seeds? Where are the vermicelli and the coloured sugar syrup? This is not Falooda! I agree I had the same reaction however when I was first served this drink in a restaurant! The owner Saira, called it Falooda I do not want to change the name. Call it milkshake I am okay with it.

I used them to make this excellent Tender Coconut Falooda, Tender Coconut Jelly and Tender Coconut Ice cream. You can also add it to fruit juices like pineapple juice top it with ice cream. What will you make? some of my friends have made Elaneer Payasam, Tender Coconut Pudding and Peach and Pineapple Coconut Water Popsicle try them out too.

This looks so refreshing. I want huge glasses of these during the summers, which by the way have way early than expected in Mumbai and has been off to a very bad start already. Tender coconut is a wonderful ingredient, natural and when combined with the cool ice cream would be super good.

Such a simple and yet an absolutely healthy recipe. We usually just blend tender coconut with the coconut water but love the idea of using milk to prepare a cooling drink.
