Tender Coconut Water Jelly with Gelatin is a delicious and yummy way to get your tender coconut water fix anytime you want it.
I love the tender coconut water and will be always willing have some anytime of the day. Then I have always used it, as a drink never thought that Tender Coconut Water could be my ingredient.
All of it changed when I had tender coconut falooda! The resulting post opened the floodgates and I cannot get enough of it. One of the posts, when I requested links to add to my post, was from Lathiya Shanmugasundaram, yes the coconut jelly without gelatin.
I kept postponing making anything with tender coconut or anything for that matter, as there were a lot of upheavals and disturbing factors, which hindered my thought process.
Meanwhile, I joined Recipe Swap, a group where we are paired and we cook from the partner’s blog. Last month I was paired with Vidya the result was Whole Wheat Focaccia with Peppers, Tomatoes, Olives and Dried Rosemary!
This month I am paired with Lathiya Shanmugasundaram who blogs at Lathis Kitchen and I knew my job was done. I knew what I wanted to make but there is one cake I am eyeing but will have to postpone making it, as hubby cannot eat this particular one right now. Coming back to today’s post of Tender Coconut Water Jelly you can follow the same technique and make it without gelatin if you can get agar-agar. I knew I had agar-agar but then I cannot find it.
Since my vacation, I have made it twice once from the sachet of tender coconut water and once with the coconut water that I purchased from the market.
The serving you will get will depend on your moulds, one bit of advice will be don't set this in the ice tray that does not have silicone release. I was in tears seeing the way the jelly came out from the tray.
Tender Coconut Water Jelly with Gelatin
- Serves: 4
- Preparation time: 5 minutes
- Cooking time: 5 minutes
- Passive time: 2 hours
Ingredients:
- 240 gms tender coconut water
- 1 tablespoon gelatin
- 2 teaspoon sugar (optional)
Method:
- Pour the coconut water into a pan, add the sugar (if using), stir, and let the sugar dissolve.
- Sprinkle the gelatin on the coconut water and wait till the gelatin soften about 5 minutes.
- On very low flame, gently heat the coconut water. Yes, with the gelatin in the mixture stir and let the gelatin dissolve.
- You are done when the back of your spoon, comes out clean without any granules.
- Pour the mixture into jelly moulds.
- Refrigerate until set.
- Serve immediately after you unmould.
Notes:
- I had picked the tender coconut water from the market and the vendor gave me the malai(the tender coconut) in a separate bag.
- Divide the chopped malai in the moulds first then add the jelly mixture.
- The fact that I added the malai to the jelly mix has resulted in the uneven distribution of the malai.
