To make the tea use made using either dried flowers or powder. In today's recipe, we'll use Butterfly Pea Tea which is laced with mint and dried lemon. It is quick and tasty!
Another new way to enjoy the herbal Butterfly Pea or Asian Pigeon Wing herbal tea. Scientifically called "Clitoria Ternatea" this tea is naturally blue.

As a part of the Shhhhh Secretly Cooking our hostess, Sasmita asked us for Summer drinks her condition was not to use aerated or fizzy drinks.
I am paired with Rafeeda who gave me ice cream and milk as my secret ingredients. For her ingredients, I thought of curds and cardamom as she will have Iftar. Just see the delicious Cardamom Almond Lassi she has made.
As a part of my research, I was scrolling Instagram when I saw this delicious drink. It was a mocktail called Purple Prose, a Vegan mocktail. I had to try it!
I have made it a few times now since I first saw it. We loved it so much and now I need to order some of the Blue Pea Flower powder.
In today's recipe, we'll use butterfly pea tea which is laced with mint and dried lemon. quick and tasty!
The colour and the tea will depend on the number of flowers you use. Adjust the number of flowers to get the colours you like from sky blue to deep blue.
Now in case you do not have the tea I have you can always use the powder or use the butterfly pea flowers. These creepers are low maintenance so try growing them or get them online. Just follow the steps I have outlined below.
A little about Butterfly Pea Tea
The butterfly pea taste is different and it grows on you. The tea is earthy and needs a sweetener but is not bitter.
The other name by which you may also know it is blue matcha. However, it is very different from Green Matcha. Green matcha is from a plant scientifically called Camellia sinensis, a type of green tea.
The use of Butterfly pea flowers in Thai and Malay cuisines is common. The brilliant blue-coloured rice dishes and desserts are due to the Butterfly pea. Of course to brew soothing blue pea tea.
In Ayurvedic medicine, it is called Aparajita. Its health benefits, including antioxidant and anti-inflammatory properties, are well known.

How to make Butterfly Pea Tea Shake Recipe
These are the ingredients you will need. For quantities please check the recipe card.
Ingredients:
- Blue pea flower tea
- Water
- Regular Milk
- Icecream
- Sugar
- Water
- Blue colour (optional)
Method:(details and pics, stepwise desc)
- In a small saucepan add the sugar and water. Stir till the sugar dissolves on low-medium heat. Bring to a boil and set aside to cool. Add blue colour if using after it cools a little.
- Meanwhile, boil water and add the butterfly pea flower tea and let it steep and cool down.
- Add milk and ice cream to the cool tea. Whizz it well. Add the sweetener of your choice if needed.
- Serve immediately.
Substitutes:
- Use blue pea flower powder or even fresh flowers if you can get them.
- In place of regular milk (I use 6% fat) use skimmed milk.
- For a vegan use plant-based milk like almond milk, oats milk or coconut milk.
- If you are lactose intolerant use lactose-free milk.
- In place of regular ice cream use lactose-free ice cream.
- Bananas or yoghurt for a creamy smoothie.
Variations:
- Make it vegan using plant-based milk like almond milk, coconut milk or oats milk.
- For those suffering from lactose allergy use lactose-free milk.
- You can also add bananas to make a thick vegan smoothie bowl.
- Use yogurt, my preference is regular but you can use plant-based ones too. This will help limit your sugar intake.
- My daughter's suggestion was to try black current ice cream.
- My next try will be with tender coconut ice cream.

How to serve:
Sky is the limit dress the Butterfly Pea Tea shake up the way you like. but here are my suggestions.
- Serve chilled plain without any toppings.
- But topped with ice cream it will be delicious.
- Whipped cream, Chia seeds, sliced fruit, Pistachios, almond slivers.
- Now I will not add lemon juice because I am using regular milk. But in case you are using plant-based milk add some. The flavours will be awesome.
- Garnish with mint and lemon slices.
How to store:
- The butterfly pea flower tea you can store in the fridge for 2 days maximum. But the shake does not store. Serve immediately.
For Your Questions

- Make a dark blue tea to start with the addition of milk and ice cream fades the colours later.
- If that happens add blue food colour to your sugar syrup.
- Use only vanilla ice cream instead of a mixture of milk and ice cream.

Butterfly Pea Tea Shake Recipe
Equipment
- 2 Saucepan
- 1 Strainer
- 1 Jar
- 1 Blender
- 4 Glasses
Ingredients
- 1 cup butterfly pea tea brewed , cooled
- ¼ cup milk or dairy-free alternative
- 1 cup ice cream
- 2 tablespoon sugar
- 6 tablespoon water
- 5-6 drops blue colour optional
Instructions
How to make Sugar Syrup:
- In a small saucepan add the sugar and water. Set aside as you get your tea ready.
- Meanwhile, your sugar must have dissolved else stir to dissolve the sugar. Cook on medium heat for 4-5 minutes. Let it cool slightly before adding the blue colour. Mix well. Set aside.
How to make the Tea:
- In boiling water add the butterfly pea tea and brew the butterfly pea tea. Let it cool.
How to make the Shake:
- In a blender, combine the cooled butterfly pea tea, milk and ice cream.
- Blend until smooth.
- Pour the shake into a glass and enjoy!
How to serve:
- Serve chilled plain without any toppings.
- But topped with ice cream it will be delicious.
