These words my ears pine hear.

Words I hear very rarely!
I let them eat before I mentioned that it’s Sweet Potato Cake!
Sweet Potato is something they do not eat!
So friends “#FireUpYourOven“to make this amazing cake!
The other food I have made in the past with sweet potato are Sweet Potato Chips, Sweet Potato  Ravioli or Kanga che Nevri.

Prep: 25 Min.
Bake: 50 min. + cooling
Makes: 12 servings
  • 1 cup butter, softened
  • 2 cups sugar
  • 4 eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground dalchini/cinnamon ( I did not use)
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¼   tsp ground nutmeg (I did not use)
  • 2 cups cold mashed sweet potatoes


  •  1 cup confectioners’ sugar
  • 1 tsp grated orange peel
  • 3 to 5 tsp orange juice


  •  Preheat oven to 180°C/350°F.
  • Grease and flour a 10-inch bunt pant.
  • In a large bowl, cream butter and sugar until pale and fluffy.
  • Add eggs, one at a time, beat after each addition. Beat in vanilla.
  • Sift the flour, baking powder, baking soda, salt and cinnamon, nutmeg if using.
  • Add to creamed mixture alternately with sweet potatoes. Beat just until combined (batter will be stiff).
  • Transfer to the pan and bake for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

For glaze:

  •  In a small bowl, combine the confectioners’ sugar, orange peel and enough juice to achieve desired consistency. Drizzle over cake.
  • Crush all the lumps in the sugar before adding the juice.

    Sweet potato in a pound cake is definitely an interesting addition. It must have made the cake so soft & yummy!!

    Arch, you are cheating the kids..hehehe..but then even I would do the same..most times I won't even tell them, lest they don't even try next time..:)..love the texture your cake's got!
