A Simple Cobbler recipe is my solution when I need an easy bake in the hot Summer.
Cobblers are easily adaptable and can be baked using fresh, frozen even canned fruit. Use plums, apples, pears, berries, peaches, to bake a delicious and colourful dessert. Have I missed out any fruits? I hope not for this delicious bake makes us very happy!
I love the Dessert Cobblers and have not as yet ventured into Savoury Cobblers so all I am thinking of is Fruit Cobblers, the dessert.

What is Cobbler?
- A Cobbler other than the person who repairs shoes etc is also food. (Clarifying because my husband is always I don't think I want till he sees the dish.)
- Cobbler is popular in the United Kingdom and the United States. The fruit or a savoury filling is cooked first, then baked with a cover of biscuit, batter or dumplings.
Why bake a Cobbler?
- Like I have already said Cobblers are amazingly beautiful desserts both to look at and to taste.
- Making a Cobbler is easier than making a pie, as pie crusts are finicky.
- Since a Cobbler is served warm the waiting period for it to cool down is much shorter than for a pie to cool down. (I have not as yet heard of a pie being served warm but if you have please let me know.)
- Use berries like blueberries, blackberries, strawberries, and raspberries.
- If you cannot get these berries you can use peaches, apples, plums, pears.
- If the fruits are not in season, no problem, use frozen ones, canned ones. Only thaw the frozen fruit before you start.
- I mean how adaptable can a bake be?
Does baking a Cobbler take long?
- No baking a Cobbler does not need a lot of time. Some people will assemble the Cobbler as dinner is being served.
- Now, this is one thing I am not comfortable about, I will find it difficult to settle down. Second, most of my guests are good friends and they will want to help. I would rather sit down with them and enjoy myself. But if you feel you can manage please go ahead.
So when do I bake my Cobbler?
- I make a Cobbler ahead and let it sit on the counter if I plan to use it the same day.
- If I make it a day ahead I pop it in the fridge and warm it up before serving.
- But a Cobbler in the fridge needs to be used up in 3-4 days.
Basic ingredients to make a Cobbler
Basically for a Cobbler, you need pantry ingredients flour, butter, sugar and fruits.
- Fresh Fruit: Use any combination of fruits, today I have used 800 grams of plums. In the past, I have used a mix of cooking apples and plums.
- Sugar: You can use caster sugar but if you do not have caster sugar use regular granulated sugar. It will need a little more time to dissolve.
- Lemon juice: Adds a lovely flavour.
- Water: To dissolve the sugar.
- Maida or Flour: Use Maida or self-raising flour.
- In case you are using maida add baking powder to it to make your own self-raising flour.
- The proportion is 1 cup maida and 1- ½ teaspoon baking powder. Sift well. You can add a pinch of salt too if you are using unsalted butter.
- Butter: Chilled Butter unsalted or salted. Since I generally have salted butter I use that and skip adding salt.
- Baking powder: Use even if you are using self-rising flour.
- Milk: Use any kind of milk I use regular whole milk.
- Yoghurt: Use natural yoghurt or curds.
Let's make the Cobbler
Like I have already said making a Cobbler is very easy. Let us Make the filling first,
- Remove the stone and quarter the plums. Peel and core apples, peaches if you are using them. In case you are using berries just use fresh firm ones.
- I prefer using a kadhai/wok you can use a saucepan to add the fruit, 100 grams or ½ cup sugar, lemon juice and cook till the fruit softens.
- This step of cooking the fruit is not necessary if you are using berries.
- Just mix the ingredients up and let it sit.
- If the berries or fruit are very juicy add 1-2 tablespoon of cornflour or starch to the berries.
Now let us make the batter for the topping.
- Sift the flour, baking powder, if you are using unsalted butter add a ¼ teaspoon salt.
- Add the balance sugar and give a good stir. If you have a food processor process the flour and butter to get fine crumbs. If you do not have a food processor use your fingertips and rub in the butter in the flour to get fine crumbs.
- Add the yoghurt and milk to form a soft dough. If you want a droppable batter do add 2 tablespoon of milk.
- Meanwhile, Transfer the fruit to a pie dish and spread it out.
- You can roll out the dough and add it to the fruit or drop it on the fruit like batter. Leave gaps between the fruit.
- Transfer to a preheated oven and bake at 180C/ 350F for 50 minutes or till done.
Plum and Apple Cobbler Recipe
Equipment

Ingredients
For the Filling:
- 800 grams plums and apples
- 100 grams sugar
- 2 tablespoon water
- 2 teaspoon lemon juice
For the Cobbler:
- 300 grams maida sifted
- 60 grams sugar
- 2 ½ teaspoon baking powder
- 85 grams butter salted, chilled and cubed
- 3 tablespoon milk
- 150 grams curds
Instructions
To make the Filling:
- Remove the stone and quarter the plums. Peel and core apples,
- Add the fruit, 100 grams sugar, lemon juice in a pan and cook till the fruit softens.
To make the Cobbler Topping:
- Sift the flour, baking powder. If you are using unsalted butter add a ¼ teaspoon salt and well.
- Stir in the 60 grams of sugar and mix well.
- If you have a food processor process the flour and butter to get fine crumbs. If you do not have a food processor use your fingertips and rub in the butter in the flour to get fine crumbs.
- Add the yoghurt and milk to form a soft dough. If you want a droppable batter do add 2 tablespoon of milk.
- Meanwhile, transfer the fruit to a pie dish and spread it out.
- You can roll out the dough and add it to the fruit or drop it on the fruit like batter. Leave gaps between the fruit.
- Transfer to a preheated oven and bake at 180C/350F for 50 minutes or until the topping is golden and the fruit is visibly bubbling beneath.
- Peel and slice the peaches if you are using them. In case you are using berries just use fresh firm ones.

Delicious Cobbler Baking Tips
- Fresh fruit, cut in bite-sized pieces (so that it is easier to eat) is the best. However, if you are using frozen fruit thaw it first.
- Your fresh fruit maybe juicy so add 1-2 tablespoons cornflour it will make a great sauce when it cooks. Best is to cook the fruit on the stovetop before transferring to the baking dish and baking.
- When you add the topping on the fruit leave gaps. So the steam escapes from the cooking fruit and the cobbler is more appealing.
- To check if Cobbler is done if you have a working thermometer use it in the thickest part of the Cobbler. The temperature should be about 93C/200F.
- But if like me you cannot find the thermometer or its cells have run out, then the filling at the sides is bubbly and the batter is beautifully golden in colour.

Archana your recipe brings back memories...when my mother in law use to have her Club members over for dinner, I would make apple cobbler. Haven't made a cobbler in a very long time. Plum and apple cobbler sounds like my kind of a pudding. Lovely dessert to serve after a meal. I make crumble but never made a cobbler. But like making a crumble,this dessert is also cobbled together and hence called a cobbler? I am certainly going to make this soon as it has no eggs..

I think the explanation that it was cobbled out of what was available makes more rational sense than any explanations I have read so far. The other explanation is a cobbled pathway that is what it looks like. What do you think?
