Koftas
I had read in Praia’s Easy N Tasty Recipes here that she had used milk powder and used the paniyaram pan for making koftas. Now paniyaram pan is a new word for me so I googled and found that it meant the pan that we use to make what is called in Kannada as gundpangala or appe in Marathi.
I quite liked the idea and Priya is one of the most innovative cooks that I have had the good fortune of meeting. It stuck; I had to try t out.
Pappa (my father) had brought over 2 packet of gulab jamun mix. Now sweets and my family … They may eat gulab jamun but I might end up fatter than God intended me to be!! So I decided to make something savoury and so koftas.
But there is one hitch my kids don’t like koftas. When I tried this recipe out I was on tenterhooks if they will eat the kofta curry.
Half the battle was won when Akanksha went off with the ‘photo model’ after she clicked the picture. Apeksha of course loved the makhani gravy so she will eat anything in it. Hooosh What a relief!!
The next mission it to try a gravy from one of the many cookbooks lying around and hope” All is well”!! 😮
To make the koftas I used:
2 cups of peeled and grated bottle gourd
1 small onion
4 cloves garlic
1 teaspoon garlic paste
A handful of coriander
6 leaves of pudina/mint(optional)
2 green chillies(adjust as per taste)
Salt
1 packet of gulab jamun mix.
Method:
1. Squeeze the grated bottle gourd and reserve the juice.
2. Grind the onion, garlic, ginger, coriander, pudina/mint, green chillies to a fine paste in the chutney pot of your mixer.
3. Mix all the ingredients to a soft dough.Take care not to knead the dough a lot as this will cause the batter to become too watery and hence difficult to handle.
4. Make small pedas out of the dough and transfer them to the gunndpangala/appe tawa and cook over low flame on both the sides. Please remember that the koftas are going to swell so make small balls I made bigger ones and the koftas were huge.
5. My yield was 16 huge koftas.
Just before serving transfer the koftas in the serving dish and pour the gravy on it. I used makhani gravy as an intro to koftas.
