Edible Gum has been a part of our Winter food in the Indian sub-continent. Our grandmothers have fed us this Antina unde for ages. The health benefit of the tragacanth gum was something we were well aware of.

My homoeopath saw that I had a fractured toe yet again she was concerned. After checking my calcium tablets recommended that I eat dink. Also called gond, gondh or edible gum with dry fruits, add seeds she said and strengthen bones.
The only thing I know with edible gum is ladoos…. The ones I ate after I delivered my kids.
My association with sweets is dangerous!
Seriously think I am addicted to sugar!
I know I cannot stop with 1-2 ladoos at one time and it is not because I am hungry. And I manage to finish the ladoos in record time. So I was reluctant!
This recipe is what she suggested this Kachha dink recipe. She has tried it on herself and she was happy with it.

How to make Antin pudi Recipe:
These are the ingredients I used. For the exact measures please refer to the recipe card.
Ingredients:
- Edible gum
- Dry dates or kharaik
- Almonds
- Pistachios
- Cashew nuts
- Pumpkin seeds
- Aliv or Halim seeds
- Chia seeds
- Clarified butter
Method:
- Cut the dry dates into thin slices.
- In a thick pan heat the clarified butter.
- Deep fry the edible gum on low flame in small batches. The gum immediately blooms, flip it once, drain and set aside. Repeat till you finish all the gum.
- In the same pan add the sliced dry dates and stir fry the dates. If it seems there is no clarified butter in the pan, it is okay. Do not add more ghee.
- Next, when the dry dates change colour, add the almonds. Continue to roast the almonds until you get a nice aroma or there are flecks on the almonds. Next, add the Pistachios and roast them again till they are crunchy.Add the cashew nuts and repeat the process.
- Similarly, roast the pumpkin seeds. The haleem and the chia seeds switch off the flame.Stir the mixture for about 2-3 minutes.
- Finally and the fried edible gum and mix well.
- Let this mixture cool completely.
- In the grinder, grind the mixture in batches.
- Store this powder in an airtight container.
Substitutes:
- Add walnuts, pecans, dried figs apricots.
- You can also use raisins, currants, dried cherries, dried cranberries or blueberries.
- For seeds, you can use ham hemp seeds, sunflower seeds, sesame seeds, poppy seeds, flax seeds.
- Add dates to make to sweeten the powder.
- Add roasted dry coconut.
Variations:
- In the powder that we have made here, you can add jaggery syrup and make laddu they will taste awesome. Check the recipe of Dry fruits Laddoo that Poonam ghas shared.
- If making laddu do not add all the edible gum to the dry fruit mix.
- Pulse dry fruits and the seed mixture to get smaller bits.
- Add the rest of the fried edible gum add jaggery syrup how to make laddu.

How to serve:
- Mix the 1 tablespoon of powder of the edible gum, seeds and nuts in ½ cup milk warm milk and set it aside for some time. After about half an hour the mixture thickens and you get a nice jelly kind of mixture.
- You can enjoy this jelly as it is. Or
- In the mixture now you can add any flavouring of your choice, add any sweetener like sugar, honey or maple syrup. Serve it. or
- add fruits of your choice say strawberries, apples, bananas. Add a sweetener of your choice. Enjoy!
- If you do not want the milk, add to a bowl of mixed fruits a tablespoon of the Gondh powder. Enjoy!
- Add some of the edible gum powder to a plate add some homemade clarified butter. Eat!
How to store:
- The powder stays well outside the fridge especially if you have not used coconut for about 15-20 days.
- Store in an airtight container glass is better.
- If you plan to store it for a longer period keep it in the fridge we can use it for about a month. In the freezer, it stays good for about 2-3 months.

- Use as far as possible use homemade clarified butter. if you're using butter clarified butter from outside see that it is not turned rancid.
- If using clarified butter that you have purchased I will suggest that you keep the Powder in the fridge always.
- While frying the edible gum pay attention as it cooks very fast.
- Cook on the stovetop on low flame.
- While roasting the dry fruits and seeds do not worry if there is no clarified butter the fried edible gum has enough.

Edible gum is also Edible Tragacanth Gum. Locally it is called Gondh, Antu, dink, Gond Katira, Edible Gondh, Gund, Gaund. Gondh is pearly translucent crystal pieces. Gondh is a resin that is extracted from certain trees. It is cooked before eating.

Edible gum or gondh is part of winter food in the Indian subcontinent. Since edible gum is considered to be able to generate heat it is eaten in the cold winter months. There is also evidence that edible gum helps strengthen bones and provide calcium so it is also considered to be food for lactating mothers and it is recommended during pregnancy. Gondh is also excellent for people with lung-related issues.

To consume edible gum you need to fry it. It is fried in hot clarified butter. Add a few of the crystals of the edible gum and fry it on a low flame. The edible crystals edible gum crystals immediately bloom. Flip them once so that they have cooked from all sides.

Equipment
- 1 Kadhai/wok use thick bottomed wok
- 1 Slotted Spoon
- 1 Plate/tray
- 9 Small bowls
- 1 Mixer/Grinder
- 1 Airtight Container
Ingredients
- 50 grams edible gum
- 50 grams dry dates or kharaik
- 25 grams almonds
- 25 grams pistachios
- 25 grams cashew nuts
- 50 grams pumpkin seeds
- 50 grams aliv or halim seeds
- 50 grams chia seeds
- ¼ cup clarified butter +3 tablespoon if needed
Instructions
- Cut the dry dates into thin slices. Set aside.
- In a thick pan heat the clarified butter.
- Deep fry the edible gum in small batches. Keep the flame low.
- The gum immediately blooms, flip it once, drain and set aside.
- Add more clarified butter if needed. Repeat till all the gum is fried.
- In the same pan add the sliced dry dates and stir fry the dates. If it seems there is no clarified butter in the pan it is okay. Do not add more clarified butter.
- Next when the dry dates change colour add the almonds.

Archana , this gond powder with all the added nuts and seeds is a wonderful idea. We all make gond ladoos during winters, but I feel too much of ghee is used in those, so I avoid making them. This powder is an innovative way of including all the winter essential ingredients in our diet without overdoing the ghee.
