Pineapples come chock-full of benefits of their own. This recipe is preservative-free to keep the natural goodness of the fruit intact. As a person living in Goa, let me assure you, there is nothing quite like a freshly baked Pao and pineapple halwo to beat the evening munchies. Healthy and tasty, homemade jam, just for you!
This recipe is a Goan Vegetarian dish and pairs well with chapatis and pav. The common breakfast in Goa is Batata Sukhi Bhaji, Mushroom Tonak, Alsande Tonak or Polle, Rava Thalipeeth.

Here in Goa, Pineapples are a summer staple. I can't tell you the number of times I’ve sat sweltering in the muggy heat, savouring the delight that is this fruit. Of course, that all comes to an end when the monsoon strikes.
Not to lose this tasty fruit after the season ends, I started turning it into a jam. Pineapple halwo is a popular jam in Goa. If you’re looking for a homemade Pineapple jam recipe this one may help you.

How to make Pineapple Halwo recipe
Ingredients:
These are the ingredients you will need. For the exact measures please check the recipe card below.
- Fresh Pineapples: our main ingredient.
- Sugar: change the quantity if your pineapple isn’t sweet.
- Lemon: to change the pH of your jam.
- Water: to cook the pineapple.

Method:
- Trim the pineapple and chop it fine ( grating is also a great option)
- Cook on low flame till the pinepple is soft.
- Add the sugar and mix.
- Add the lemon juice as the mixture starts changes colour.
- Cook till you get 1 string consistency.
- Transfer to an air-tight container and once cool refrigerate it.
How to serve:
- Serve with bread or chapati.
- Tastes great with cookies or a cake filling.
- Martha Stewart uses pineapple jam as a foundation for sweet-and-sour sauce or a glaze for roasted meats.
Storage
- Transfer to an air-tight container and once cool refrigerate it.
- Mine was good for about 1 month before I finished it all.

What is one-string consistency of sugar syrup?
Sugar syrup is called chashni and the end result of your dish depends on it.
To make a one-string consistency of sugar syrup, boil sugar and water. When the single thread consistency is ready take a drop of the syrup on a plate. Dip your forefinger in it then with your forefinger and thumb pull it. If a single string forms then your syrup is ready.

Goan Pineapple Halwo
Equipment
- Kadhai/wok

Ingredients
- 1 cup pineapple peeled and chopped fine
- ½ cup water
- ¾ cup sugar
- 1 teaspoon lemon juice
Instructions
- Peel and chop the pineapple fine. You can also grate the pineapple.
- In a thick bottomed pan add the pineapple and water.
- Cook on medium flame till the pineapple softens. Add ¼ cup water if needed. This takes about 30-40 minutes depending on the size of the pineapple.
- Once the pineapple softens add the sugar.
- The mixture will become watery but do not panic. It will thicken.
- As the colour of the pineapple changes add the lemon juice and mix well.
- Cook the pineapple and sugar mixture till it reaches one string consistency.
- You can wait for the mixture to cool before you transfer it to a jar. But I prefer to keep the bottle on a wooden plank and add the hot jam to the bottle. Do not remove the bottle till it cools completely.
- When the bottle cools completely transfer to the refrigerator.
