Banana Bread~A blog Hop

For today’s Blog Hop started by Radhika I am paired once again with Veena of Veg. Junction.

Choosing what I wanted to make was very easy as I had already bookmarked some recipes and plus the banana plant that we had planted decided to bestow its fruits on us.

Seeing Veena’s yummy bread I was a tad bit too confident and my bread did not rise to the occasion.

It was a bit too dense and my husband told me “just make the basic cake no variations please”. (To hubby dear anything sweet and out of the oven is cake. Even now he tells me it is a cake and not bread).

Now after this will you give up? I made the basic cake he wanted but made this too but after I googled and landed here the rest as we say is history.

The bread disappeared in a jiffy. The cake was not received as enthusiastically as this bread.

I wanted to try vegan so I substituted butter with oil both the times. Also   I am trying to include flax meal in our meals so this was ideal.

Ingredients:

¼ + 1/8 cup Maida
½ cup Whole wheat flour
½ + ¼ cup mashed bananas
1/4 cup sugar (I used ordinary and Demerara in equal quantities)
40 ml olive oil (that is ½ of 1/3 cup)
½ tsp Baking powder
½ tsp soda
Salt a pinch
1 tbsp Flax meal
3 tblsp Warm water to mix with flax meal
Method:
1.    Mix the flax seed meal with warm water and set aside for about 5 minutes.
2.    Grease a bread loaf pan.
3.    Preheat the oven to 180ᵒC.
4.    Sift the flours with the baking powder, soda and salt. Set aside.
5.    Mash the bananas well add the oil and whisk well.
6.    Add the sugar and cream for about 5 minutes.
7.    Stir in the flax meal mixture.
8.    Fold in the flours in this mixture.
9.    Transfer to the bread loaf pan and bake till done.
The flour was sticky dough and I could not smoothen it out. The recipe called for baking time of 35 minutes mine was done in 20. Please check the moment you get a delicious aroma.
