Mere Attithi Series# 2 Eggless Walnut Muffins
Most of us are aware of the versatile blogger who churns out amazing recipes and at the rate that amazes me!
Have you tried her recipe index? The lady is amazing. Once in a bid to reduce my bookmarked recipes, I did not bookmark her pasta recipe and when I tried hunting for it when I needed it I was lost. Just lost!!
Who am I talking about? My guest for today is...none other than Priya Suresh the driving force behind the blog Priya's Versatile Recipes!!
Priya is basically from Pondicherry a beautiful city in South India. Predominant in its French Culture, but currently she lives in one of the most romantic cities Paris, France.
Priya’s love for food is apparent in her versatile blog not only Indian Cuisine but also bakes and fusion recipes are her forte. Like most of us her love for food and the thought of having them all in one place had her blogging. We should thank her friend for the lovely lovely idea. Now Priya has been blogging from 2008 yes her blog baby will be 4 years soon.
Now Priya’s family support and appreciate the creativity that Priya has. So is this the end of Priya’s creativity? No she has a blog where she has posted her craft but she has not updated it lately but I am sure it’s also as versatile as her food.
What are her favourites on her blog ? Well they are Mango Rasgullas and Lychee Badam Kheer and her grandma’s signature dish Vennai Puttu, but the maximum hits are on Chocolate Yogurt Cake.
The best thing is Priya has said she will not stop blogging at all. So on this cheery note let’s all drool over her delicious guest post.
EGGLESS WALNUT MUFFINS
2cups All purpose flour
½cup Sugar
¼cup Butter
¼cup Oil (sunflower or canola)
1cup Buttermilk
¼cup Walnuts (grounded as fine powder)
1tsp Baking powder
½tsp Baking soda
1tsp Vanilla extract
2tbsp Chopped walnuts
Preheat the oven to 350F.Sieve the flour with baking soda and baking powder, add the walnut powder, mix and keep aside.
Beat the sugar, butter and oil until the sugar gets well dissolved, immediately add the buttermilk, and vanilla extract, whisk everything well.
Gradually add the dry ingredients to the wet ingredients, mix it well with a spatula, batter will be quite thick but don’t over mix the batter, else ur muffins will turn hard.
Drop enough batter to the silicon muffin tray and bake for 20-25minutes until a skewer inserted comes out clean.
Enjoy with a cup of tea.
