Green Papaya with Nigella Scent is a delicious tasting vegetable with unripe Papaya. It is difficult to guess that you are eating papaya unless you see your mom chopping it up. 😀

Green Papaya with Nigella
Unripe papaya as a meat tenderiser is great. It is used as an ingredient for salad in South Asian cuisine too but the use of Unripe Papaya in Indian cuisine was an eye-opener to me. Looks like I know what happens elsewhere more than my own backyard.
When it pours in Goa it pours and one such unseasonal rain my neighbour's heavily loaded papaya tree finally surrendered and fell. Therefore, the next day she offered me 2 green papayas and looking at my blank expression told me to make a vegetable.
She gave a version that uses coconut now that I am reducing the use of coconut in our food preferred to make this version that I saw in Chef Vikas Khanna’s book, “My First Kitchen!” which I have borrowed from the Central Library, Panaji. Chef has used laung/cloves too but I did not as hubby who has a sea change in his diet did not want to add more pressure.
We eat a lot of Papaya but as a fruit or as a smoothie. I have made a salad in the past but lost the post when I was hacked. Hopefully, the salad will be the next post.

Green Papaya with Nigella
Green Papaya with Nigella Scent
- Serves: 4
- Preparation Time: 10 minutes
- Cook Time: 10 minutes
Ingredients:
- 2 tablespoon Oil
- 1 tablespoon nigella seed/kalonji/onion seeds
- ½ teaspoon laung/cloves (I did not use)
- 1 cup onion chopped
- 1 tablespoon dhania/ coriander seed powder
- ½ teaspoon haldi/turmeric powder
- 3 cups unripe papaya peeled, deseeded and chopped
- Salt to taste
Method:
- In a kadhai/wok heat oil.
- Add the kalonji seeds and cloves, if using, and stir-fry till you get a nice aroma.
- Add the chopped onion, haldi and the coriander seed powder. Stir-fry until onion is golden brown.
- Reduce the heat, add the papaya, salt and mix well.
- Cook covered, (I covered with a big plate on which I added water) until papaya is tender. I had to use about a tablespoon of water to prevent the vegetable burning.
- Serve hot.
