Ingredients

  • 240 gms tender coconut water
  • 1 tablespoon gelatin
  • 2 teaspoon Sugar optional

Instructions

  • Pour the coconut water into a pan, add the sugar (if using), stir, and let the sugar dissolve.
  • Sprinkle the gelatin on the coconut water and wait till the gelatin soften about 5 minutes.
  • On very low flame, gently heat the coconut water. Yes, with the gelatin in the mixture stir and let the gelatin dissolve.
  • You are done when the back of your spoon, comes out clean without any granules.
  • Pour the mixture into jelly moulds.
  • Refrigerate until set.
  • Serve immediately after you unmould.

Notes

  • I had picked the tender coconut water from the market and the vendor gave me the malai(the tender coconut) in a separate bag.
  • Divide the chopped malai in the moulds first then add the jelly mixture.
  • The fact that I added the malai to the jelly mix has resulted in the uneven distribution of the malai.
