Quick Fix Indo-Chinese Vegetable 2

#Quick vegetables are a blessing to any homemaker. A quick stir fry tastes just as amazing as a snack and as a side dish.

The story behind this veggie is quite simple we were to go out-of-station and I had a mixture of vegetable to finish, an eclectic mix that was absolutely mindboggling.

Can you imagine a carrot that has seen better days, cauliflower, cabbage a small piece, some bean sprouts and some coloured capsicum?

If you know my kids then you will know that everyday food is not much appreciated. If I want the blessed thing to get over it had better be something they appreciate.   Everyday vegetables they eat but prefer variety. Hence this quick fix vegetable in Indo-Chinese style.  The vegetable was to go with chapattis they had just the vegetable!

    Quick fixes are saviors for busy moms like us and if it’s colorful, healthy n easily picked by kids….. Nothing like that

    Love the Chinese twist on mixed vegetables. Whatever twist makes the kids eat their veggies is welcome.
