Hesar Bale Gajjari Kosambri or Moong Dal and Carrot Salad, an Indian salad, very simple to make and a  must for most festivals. It is healthy and protein-rich too.

Hesar Bale Gajjari Kosambri

Since moong dal, hesar bale, or hessaru bale is light for digestion it is ideal for the aged, young and those recovering from sickness. It is also a part of a postpartum diet.

I had totally forgotten about this salad until PJ posted it here. Thanks PJ!

The salads served in small helpings I do not know why but since it is delicious and I have been advised a light diet this is something I made and had a full bowl for my 11 am snack.  Believe me I did not realise it was 1:30 pm and way past my lunch hour when my kid came home from school.

The main ingredients here are moong dal, carrots and a good tempering.

A simple yet delicious Indian Salad.

Ingredients

  • 1/4 cup moong dal soaked
  • 1 carrot grated
  • 2 Green chillies chopped
  • 1/2 tsp Oil
  • 1/4 tsp Rai/mustard seeds
  • pinch Hing/Asafoetida
  • Salt to Taste
  • 1/4 piece Lemon

Instructions

  • Soak the moong dal for 1/2 an hour.
  • Drain add the grated carrot.
  • Heat oil in a small pan splutter the mustard, add hing/asafoetida.
  • Add the green chillies.
  • Pour the tempering in the moong and carrot mix.
  • Add the rest of the ingredients and stir well.
