Hesar Bale Gajjari Kosambri |Moong Dal and Carrot Salad
Hesar Bale Gajjari Kosambri or Moong Dal and Carrot Salad, an Indian salad, very simple to make and a must for most festivals. It is healthy and protein-rich too.
Since moong dal, hesar bale, or hessaru bale is light for digestion it is ideal for the aged, young and those recovering from sickness. It is also a part of a postpartum diet.

The salads served in small helpings I do not know why but since it is delicious and I have been advised a light diet this is something I made and had a full bowl for my 11 am snack. Believe me I did not realise it was 1:30 pm and way past my lunch hour when my kid came home from school.
The main ingredients here are moong dal, carrots and a good tempering.
