What is Sattu?
Sattu is roasted and powdered grains, the most common being roasted chana or Bengal gram. This powdered protein is popular in states like Bihar, Jharkhand, and Uttar Pradesh. A versatile ingredient known for its nutritional value and cooling properties, Sattu is used to make both sweet and savoury dishes, especially in the summer months.
What is Hummus?
Hummus is a Middle Eastern and Arabic dip or spread. It consists of cooked chickpeas blended with tahini, olive oil, lemon juice, salt, and garlic.
It is also served as an appetiser and dip or as an accompaniment to falafel, grilled chicken, fish, eggplant or a flatbread, such as pita.
Ingredients for Sattu Hummus

- Sattu Flour
- Sesame seeds toasted
- Yoghurt
- Garlic cloves
- Salt to taste
- Ice cubes
- Lemon juice
For Garnish
- Virgin Olive oil
- A pinch of paprika
- toasted sesame seeds
- Mint
How to make Sattu Hummus
- Grind the sattu and toasted sesame seeds.
- Blend the yoghurt, garlic, salt and ice cubes.
- Mix in the lemon juice. This way, the yoghurt does not get bitter.
- Garnish with olive oil, sesame seeds, paprika and mint.
Substitutions for Sattu Hummus
- Sattu Flour: replace with chickpea or garbanzo beans, fava beans or legumes of your choice.
- Sattu Flour is Roasted Chickpeas, Bengal gram, Dalia, or Puthani. If you do not have Sattu flour, grind it in the mixer.
Variations to Hummus
- If you like spicy dips, add chilli flakes.
- You can also use cumin and sumac to give a delicious flavour.

Sattu Flour Hummus Recipe

Ingredients
- 4 tablespoon Sattu Flour
- 2 teaspoon sesame seeds toasted
- 2 tablespoon yoghurt
- 4 garlic
- Salt to taste
- 3-4 ice cubes
- 1-2 teaspoon Lemon juice
For Garnish
- 1-2 teaspoon olive oil
- paprika a pinch
- 1 teaspoon sesame seeds toasted
- mint leaves
Instructions
- Grind the 4 tablespoon Sattu Flour and the roasted 2 teaspoon sesame seeds in a dry grinder.
- Blend the 2 tablespoon yoghurt, 4 garlic cloves, Salt and 3-4 ice cubes in another mixer jar.
- Mix the sattu and blended yoghurt till it is well combined.
- Mix in the 1-2 teaspoon Lemon juice.
Garnish:
- Garnish with 1-2 teaspoon olive oil, A pinch of paprika, and toasted 1 teaspoon sesame seeds.
- Garnish with mint leaves.
