It so happened that my father happened to read about pomegranates and their health benefits and came home with so many of them that even peeling 2-3 at a time they were still there. Everyone was tired of eating them too so I made a salad he suggested.
Actually, he had said carrots, pomegranates and sprouts I added the French beans that I had parboiled, then the last few cherry tomatoes. Since it looked a bit too red I added a bit of mint mayonnaise.
The main ingredients are Pomegranate, carrot and sprouts.
This is a finish all leftovers salad and no proportions.

Pomegranate, Carrot and Sprouts Salad
- 2 carrots grated
- 1 pomegranate peeled and pearls removed
- 1 cup sprouts
- 8-10 cherry tomatoes halved
- 4-5 French Beans parboiled
- Salt to Taste
- 1 teaspoon mint mayonnaise optional
- In a bowl mix all the ingredients.
- Serve immediately.
