Ingredients
1bottle gourdcut into 1 inch cubes
½cupChana dalor split bengal gram soaked for 1 hour
Salt to Taste
½teaspoonturmeric powder
½teaspoonred chilli powder
2teaspooncoriander powder
2green chillichopped
½inchGinger opped
2tablespoonGhee
½teaspooncumin seeds
Asafoetida Powder a pinch
1teaspoonSugar
2teaspoonLemon juice
2tablespoonCoriander Leaveschopped
Instructions
In a deep pan chana dal, bottle gourd, ginger, salt, chilli powder, coriander powder, green chillies and turmeric powder and bring to boil with 2-3 cups of water.
Reduce heat and cook covered till the gram is soft and the bottle gourd is cooked. This will take about 20-25 minutes.
Mash with the ladle slightly and set aside.
Heat ghee in a non-stick pan add cumin seeds, asafoetida and let seeds crackle.
Add the dal mixture and simmer stirring for about 2 minutes.
Remove from heat and add the lemon juice.
Serve hot garnished with coriander sprigs.
Notes
In place of lemon juice you can use 2 tomatoes. Cook it in the ghee and jeera/cumin tempering till mushy then add the dal mixture. But the lemon gives it a lovely flavour.You can cook the dal and bottle gourd in a pressure cooker for 2-3 whistles. I tried it but preferred the stove top cooked.
