Lemon Barley Water for Refreshing Elevenses

Servings: 5 glasses


  • 3/4 cup pearl barley
  • 1 tbsp lemon zest
  • 2 lemons juiced
  • 6 cups Water
  • 1/2 cup Honey


  • Wash and rinse the barley till the cold water runs clear.
  • Add the lemon zest, and water in a deep pan.
  • Bring to boil and reduce the heat to medium. Simmer for 10 minutes.
  • Once cooked Strain the barley water. Keep the barley you can make a delicious filling meal from it.
  • Add honey to the bowl and stir to dissolve.
  • Let the mixture cool a bit then add the lemon juice.
  • Once the mixture comes to room temperature pour in bottles to chill.
  • Since I was running short of space in the fridge I set them to form ice cubes.
  • Serve and enjoy!
