Protein-Rich Broccoli and Almond Soup Recipe

Broccoli and Almond Soup, mildly flavoured with garlic, is a comfort soup that is simple to make and yet healthy too.
I keep buying the broccoli and forgetting about it. Therefore, this time also when I was looking at the slightly yellow head of broccoli I knew it had to be disguised.

I just made the soup and went on adding ingredients as I could find. Boy ! was I amazed at the flavours in the soup. Moreover, the best part was the yellow colour that I was dreading had vanished.
Broccoli is a relatively new entrant to my kitchen and I am yet to discover how to use this broccoli. Broccoli is rich in Vit. C, Vit. A and calcium to name a few nutrients. Almonds are rich in protein, calcium, iron and magnesium besides being brain friendly.
Therefore, this soup not only is a comfort food it is also nourishing.
The main ingredients of the Broccoli and Almond Soup are broccoli, almonds, onions and garlic.

Protein-Rich Broccoli and Almond Soup
Protein-Rich Broccoli and Almond Soup Recipe
- Preparation Time: 15 minutes
- Cooking Time: 15 minutes
- Makes 6 servings
Ingredients:
- 1 broccoli head
- 2 onions, diced
- 6 garlic cloves, diced
- 16 almonds
- 2 tbsp olive oil
- 1 tsp butter
- 1 cup milk
- Salt to taste
- 1 tsp pepper
Method:
- Chop the broccoli into fine pieces.
- In a deep pan, heat the oil and butter.
- Add the garlic and stir-fry until the raw smell goes away.
- Add the onions and stir-fry until the onions are translucent.
- Add the almonds and stir-fry for 2-3 minutes.
- Add the broccoli and stir-fry until colour changes.
- Remove from the flame; allow it to cool a little.
- Transfer to a mixer jar or blend to a smooth paste.
- Transfer the mixture to the pan adjust the thickness and bring to boil.
- Add milk and cook for 2 minutes or till the mixture comes to boil.
- Serve immediately garnished with pepper powder as needed.
- Serve hot.
