Subz Pulao
Today is the last day of Blogging Marathon #13 started by Shrivalli and I am glad to be a part of it.
For this Marathon I have posted Rice varieties, kid friendly and under 20 minutes since I thought was on a lower side in my blog. Baba re I am a South Indian so few rice varieties? Sacrilege!! So rice it was.

Let’s see there is Veena’s Microwave cooking event started by Srivalli and Priya’s only sprouts started by Kalyani and this Marathon with rice so I went in for this simple Subz Pulao by Nita Metha.
Those of you who have the IFB Microwave Cookbook will know what I am talking about.
So here it is friend Subz Pulao by Nita Metha adapted by Archana a/s The Mad Scientist.
Serves 4
Source Nita Mehta’s IFB Cookbook
Ingredients:
1 ½ cup basmati rice, washed and drained
5 tblsp oil
1 teaspoon ginger paste
1 teaspoon garlic paste (I used 4 cloves garlic minced)
¼ teaspoon haldi/turmeric
½ teaspoon red chilli powder
Salt to taste
1 potato cut in pieces
1 cup cauliflower florets
1 cup Soya bean sprouts, pressure cooked for 2 whistles*
1 tomato, chopped
2 red chillies broken in pieces
1 tblsp mint, chopped
Coriander, chopped
1 teaspoon lemon juice
Saboot Masala or Spice Bag
10 pepper corns
4 cardamoms
3 black cardamom
4 cloves
2 sticks cinnamon
Method:
1. In a micro proof dish put oil, garlic, ginger, potatoes, cauliflower and Soya sprouts.
2. Mix well and microwave for 3 minutes.
3. Add the rice, 3 cups water, salt, turmeric, chilli powder and the spice bag. Mix well microwave for 6 minutes covered.
4. Add tomato, mint, coriander, red chillies and lemon juice. Stir with fork gently.
5. Cover and microwave for 7 minutes.
6. Wait for 4 minutes. Fluff the rice. Remove the spice bag.
7. Serve with pumpkin raita.
Here is the Pulao when I just opened the rice cooker.
The only thing that I would like to do next time is add more sprouts. My kid no 2 was just fishing out the sprouts and enjoying them.
*For the soya bean sprouts soak overnight. Drain in the morning and then leave them covered in the sprout maker. You get lovely sprouts that after debate with my SIL where she opined that removing the peels was hazardous to health I just pressure cooked them with a little salt and very little say ⅛ cup water for 2 whistles.
