  1. Slice the mushrooms. In a small bowl mix the Soya sauce, red chilli powder, vinegar, salt and sugar.
  2. In a kadhai/wok heat the oil. Add the garlic and let it brown. This is important as the burnt garlic here gives the dish its flavour.
  3. Add the mushrooms and stir-fry stirring continuously. Once mushrooms are cooked they get a distinctive aroma.
  4. Add the Soya sauce mixture and stir continuously.
  5. Serve hot .
