Pour the coconut water into a pan, add the sugar (if using), stir, and let the sugar dissolve.
Sprinkle the gelatin on the coconut water and wait till the gelatin soften about 5 minutes.
On very low flame, gently heat the coconut water. Yes, with the gelatin in the mixture stir and let the gelatin dissolve.
You are done when the back of your spoon, comes out clean without any granules.
Pour the mixture into jelly moulds.
Refrigerate until set.
Serve immediately after you unmould.
I had picked the tender coconut water from the market and the vendor gave me the malai(the tender coconut) in a separate bag.
Divide the chopped malai in the moulds first then add the jelly mixture.
The fact that I added the malai to the jelly mix has resulted in the uneven distribution of the malai.
