Herbed Garlic Pull Apart
Baking is something I enjoy but baking bread is something that I do not dare try at all.
For I have failed repeatedly!!
But when I saw this herbed Spicy Garlic Pull Apart baked by Champa I fell in love with it. And baked it!! Four times now and not once have I had a problem.
Do try it out and bask in the praises heaped on you by all who come in its ambit.

There is no change in what I have done and what Champa has done except the garlic powder is replaced with crushed garlic and I have added onion to the paste as my jar cannot handle smaller quantities.
Ingredients:
3 cups all purpose flour
1 cup Warm water
1 ¼ teaspoon Salt
1 ¼ teaspoon Salt
1 tblsp Sugar
2 tblsp Oil
2 teaspoon Active dry yeast
2 chopped fine Green chillies
15-20 Mint leaves, chopped fine
¼ cup Coriander, chopped
7 flakes Garlic, crushed
2 tblsp Oil

To make a paste:
2 tablespoon Oil
Salt - to taste (about ½ tsp)
3 chopped Green chillies
2 tablespoon Mint leaves chopped
½ cup Coriander
1 clove Garlic
1 small onion (optional)
1. In a bowl, take warm water, sugar and yeast. Let it stand till it froths.
2. Add the remaining ingredients to it and start making dough.
3. When all the flour has been absorbed, knead it for 10 minutes or until it is smooth and elastic. It should not be sticky or tacky. If it is, add 1 tablespoon flour at a time and knead it.
4. Place in an oiled bowl and turn it once to coat all the sides. Cover and let rise in a warm place.
5. About 45 minutes to an hour or till double in bulk.
6. Meanwhile, line a 9 X 5 loaf pan with aluminum foil. Leave an overhang so that you can lift the loaf as soon as it is done.
7. Coat the bottom and sides of the foil with oil. Set aside.
8. In a small jar of the mixer take all the ingredients mentioned in 'To make a paste' and mince them so that it is a coarse paste with some oil. Adjust the salt and set aside.
9. When the dough has doubled, punch it down on a lightly floured or greased surface. Divide the dough into 12 or 14 small portions.
10. Keep the loaf pan so that the pan is sitting on the shorter edge. Take one dough ball and flatten it to about ½ " thick to any shape a rough oval will be fine. Repeat with the remaining dough balls.
11. Place one dough ball in the pan, top it with little bit of the paste and spread it evenly to coat all the dough balls.
12. Stack the flattened dough balls in the pan and when done, place the loaf pan correctly. Spread the remaining paste if any on the top.
13. The dough will not fill the pan but that is okay. It will get full after the final rise.
14. Cover loosely with oiled plastic wrap and let it rise till the dough is double or it touches the rim of the loaf pan. About 45 minutes to an hour.
15. Towards the end of the rise time, preheat the oven to 180ᵒC (recommended is 190ᵒC but I do not have that setting). Bake for 35 minutes. (Actually Champa baked at 190ᵒC for 25 minutes then at 180ᵒC for 5-8 minutes).
16. Cool in the pan for 5 minutes and then holding the overhang, remove it and place on the wire rack to cool completely.
17. Pull the bread when completely cool if you can keep the swarming kids way resist the smell that long.
